Mushrooms are so packed with nutrients that many consider them a “superfood.” We’ve got three great ways to work mushrooms into your daily diet!
Chip Them
One of the easiest ways to get creative with mushrooms is to bake them into chips. They make a yummy, filling snack and offer a rich, earthy flavor that set them apart from many chip alternatives.
You can also use this recipe with pretty much any kind of mushroom with limited tweaks. Just season and bake, with the time varying based on how thick or hearty the mushrooms are. The trick is to make sure that the slices are fully crispy before taking them out of the oven.
Mushroom Chips Recipe
Ingredients
- 8 oz white mushrooms, sliced
- 2 tbsp olive oil
- 4 tsp salt
- 2 tsp pepper
- 2 tsp garlic powder
Directions
- Preheat the oven to 350°.
- Cover a baking sheet in tin foil.
- Wash the mushroom slices and dry thoroughly.
- Pour the mushrooms in a large bowl and drizzle with the olive oil, salt, pepper, and garlic powder.
- Mix together, coating both sides of the mushrooms thoroughly.
- Place the mushrooms flat on the baking sheet and bake in the oven for 30 minutes, or to desired crispness.
- Serve!
Pizza Them
We talked about a similar recipe in our article “Healthy Hacks for Your Favorite Snacks: Pizza.” Not only is this a smart way of making pizza healthier, it’s a tasty way to work mushrooms into your diet.
What’s great about this recipe is that it’s easily scalable. Say you’re having guests over and want quick finger food? Swap the large Portabella cap out for a smaller mushroom of your choice. Beyond that, you scale back the rest of the ingredients. Now, you have the perfect healthy snacks for a dinner party or just a cozy night in!
Mushroom Pizza Recipe
Ingredients
- 1 large Portabella mushroom cap
- 2 tbsp olive oil
- 3 tbsp pasta sauce
- 2 tbsp mozzarella cheese
- 2 tbsp parmesan cheese
- 3 thin slices pepperoni
- 1 tsp oregano
Directions
- Preheat oven to 350°.
- Cover a baking sheet in olive oil and spray a small amount of cooking spray on the sheet to prevent sticking.
- If mushroom cap is still attached to the stem, remove the stem.
- Wash the cap under water and thoroughly dry.
- Brush olive oil thinly on both sides of the cap.
- Flip the cap upside down, so the part that was attached to the stem is facing up, and place it on the baking sheet.
- Bake in the oven for 10 minutes, remove from the oven.
- Switch oven to broil on high.
- Evenly spread pasta sauce along the inside of the cap.
- Sprinkle the two cheeses onto the cap and place the pepperoni slices.
- Put the baking sheet in the oven and bake for 5 minutes.
- Serve!
Burger Them
Burgers can be tough, especially if you’re on a diet or vegetarian. We addressed this in our “Healthy Hacks for Your Favorite Snacks: Burgers” article. In that article, we discussed replacing the buns with portabellos, but you can even take it a step further.
That’s right, you can replace the burger patty with a mushroom cap. This is perfect for anyone passing on the classic beef patties. Not only is it delicious, this recipe is low in calories and high in nutrients!
‘Shroom Burger Recipe
Ingredients
- 1 large portabella mushroom cap
- 1 whole wheat hamburger bun
- 1 slice cheddar cheese
- ½ cup lettuce
- ¼ a small onion
- 2 tsp salt
- 1 tsp pepper
- 1 tsp onion powder
Lite Aioli (Optional)

- 2 tbsp mayonnaise
- 1 tbsp plain Greek yogurt
- 1 ½ tsp lemon juice
- ½ diced clove garlic
- Salt to taste
Directions
- Heat grill on medium high heat.
- Slice a ¼ of the small onion and remove any rounded ends.
- Mix aioli ingredients (mayonnaise, Greek yogurt, lemon juice, garlic, and salt) in a small dish. Set aside.
- If mushroom cap is still attached to the stem, remove the stem.
- Wash the cap under water and thoroughly dry.
- Brush olive oil on both sides and season with salt, pepper, and onion powder.
- Place both the onion and mushroom cap (stem side up) on the grill and close the grill lid.
- Cook for 8 minutes, flipping the onions halfway through. After 6 minutes, place the slice of cheese on the mushroom cap.
- Assemble the burger toppings to taste: separate rings of grilled onion and top cap, spread aioli on burger bun, top with lettuce.
